Every year, the month of February is one of anticipation as couples across the world get ready to celebrate Valentine’s Day, a day dedicated to their significant other. On1y  had an interesting question to ask and a  sustainable initiative on this occasion: What is the future of food? For every answer, they would plant a sapling. From vegan food and lab-grown meat to microgreens and robots, diverse opinions were penned down. “I think one should not worry about the future of food, because food is always going to be there,” said Akshraj Jodha, Executive Chef, ITC Hotels. Many believe that adopting a no-waste policy is the way forward. “As a culinary academic, I can say that right now the biggest challenge in our world is sustainability. From a chef’s point of view it is important that we plan everything well so that there is no waste,” said Dr. Suborno Bose, Chairman, IIHM Bangalore. But there are other sustainable methods as well. “Generally, there’s a lot of things happening in India, people are starting to understand there are great opportunities in sustainability whether it be livestock, seafood or just aquaponics,” said Shaun Kenworthy Chef, restaurateur, food and restaurant consultant and columnist.

Six Festive Dishes To Pamper Your Taste Buds This Diwali

Diwali, also known as Deepavali or Dipavali, is right around the corner. This Indian festival of lights is the climax to a four or five-day celebrations which marks a glorious victory in the Indian culture. It’s a celebration where the sky explodes with fireworks, the streets are dotted with twinkling diyas, and the homes crackle with the laughter of loved ones and friends.

However, there is more to this iconic celebration than just putting up lots of lights. Irrespective of what you call this most anticipated cultural gala of dazzling lights, legacies of victory and harmony, mouth-watering festival dishes and gifts to wish each other well-being and prosperity, Diwali truly unites the entire nation with its ubiquitous tradition and its gluttonous festive feasts. Rooting from the rich culture and the flavorful tradition of the country, here’s a list of the delicacies from the Diwali special food menu to kickstart the favourite Indian Festival:

Samosa

Samosas are small pockets of pastry, usually shaped into a triangle, stuffed with spiced potatoes, peas, lentils, and other vegetables are the most loved snacks in North India during Diwali. Although there are various versions of samosas, a traditional samosa is a deep-fried maida shell with fried onions with spices like cinnamon and cardamom and vegetables including peas, carrots, and mashed potatoes as fillings. Traditionally accompanied by coriander or tamarind chutney, these savoury pastries are a perfect tea time snack for this festive season.

Chakli

Chakli, or Murukku as known in various parts of the country, is a household snack from the south and the south and west India. These are crip and crunchy deep-fried snacks made with rice flour, gram flour or a mixture of lentil flours. The dough is infused with spices and molded into circular shapes with an extruder. These are then fried in hot oil until it becomes brown. Alternatively, one can also mold the dough with hand to form tiny circles to make Kadboli. The traditional savoury snack, like Murukku, is prepared from a mixture of chickpea, urad, moong and rice flour, pink salt, and flavourings such as chilli, ajwain, or cumin.

Shahi Tukra

Treat your sweet tooth with royalty in every bite with the Shahi Tukra, a delicacy from Hyderabad. This Indian version of bread pudding is a delectable dish with the deliciousness of bread infused with the richness of milk and cream. Topped with dry fruits and spices, this Nawabi cuisine is one remarkable dessert that one must try this Diwali!. Made by deep frying the bread slices in pure ghee and then dunking them in sugar syrup infused with saffron or cinnamon followed by topping it off with lustrous rabdi or milk cream.

Puran Poli

This popular Maharashtrian sweet bread is a household hero in various parts of West and South India. Puran Poli, or Holige or Baksham, is a traditional Indian stuffed bread with sweet lentil filling and a simple bread made of wheat flour or all-purpose flour with a dash of pink salt. Generally served as a dessert in the Southern parts of India, Puran Poli is also served as a part of a savoury meal. Although a generous drizzle of ghee (clarified butter) at the time of serving is very common for all regions.

Rasmalai

Rasmalai, the irresistible Indian sweet, can be described as “a rich cheesecake without a crust”. Believed to originate from Bengal, this dessert is considered to be a variation of the Rasgulla in which syrup is replaced with thick milk flavoured with cardamom or rose essence. The cheesy dough made with split milk is kneaded and shaped into balls which are then cooked in a milk base and soaked. These are later soaked in thick milk laced with cardamom powder and saffron strands.

Chivda

Chivda, or mildly spiced poha, is a quintessential Diwali dish across the country. Sometimes eaten as part of a meal or as a standalone snack, Chivda is a perfect savoury dish for balancing the taste of this festive season. While the Chivda gets its crisp texture from the roasted Poha (flat rice), its nuttiness is derived from the peanuts and the cashews. The balanced taste of the snack is obtained from spices like asafoetida, paprika powder and other spices. This fusion of crunchy poha and spices is a perfect snack when you wish to munch onto something delightful!

6 traditional dishes during Navratri savoured across India

Navratri is a very special festive time in India. It kick-starts a chain of multiple festivities, joy, and religious celebrations. If you think Navratri is a festival limited to Gujarat, then you are highly mistaken. It is celebrated across India in different names and ways but the reason behind the religious celebration stays the same—win of good over evil. 

Be it the grand Durga Pujo in West Bengal, Dandiya raas in Gujarat, Raavan Dahan in Delhi or the fascinating ritual of Kolu in Tamil Nadu—every celebration is associated its own significant flavoursome delicacies that are relished during these nine days while they fast. From old savouries to the newer sweets, here’s a list of six best traditional Navratri Dishes. 

Sabudana Khichdi 

Sabudana is one of the most popular sources of starch and it helps the devotees who are fasting attain the much-needed energy boost. Soaked Sabudana cooked with mild spices, peanuts, potatoes, and seasoned with black pepper is popular in most of Northern India. Instead of regular table salt, rock salt or sandha namak is used in the preparation as it is unprocessed and considered pure. Sabudana as an ingredient is very popular during Navratri and it is also used to prepare Sabudana Vada that also makes it a great Navratri snack. 

Luchi with Aloo’r Dum 

During the colossal Durga Pooja celebrations in Bengal that starts with Mahalaya, devotees turn to savour this delectable pair during the four main days of puja. Luchi, which is similar to ‘Poori’, is made only of maida. They are deep-fried and it is paired with aloo’r dum which is a divine combination of baby potatoes with ounces of onions, ginger, garlic, a mix of spices and garnished with herbs like basil, coriander and parsley. While in the north people follow a strict vegetarian diet during the nine days of Navratri, people in the east binge on a variety of non-vegetarian dishes.

Payasam 

A crucial part of prasadam during Navratri is Payasam, a widely loved sweet delicacy in Tamil Nadu. This classical version of payasam is made using vermicelli along with milk, sugar, and cardamom powder. Other versions use moong daal or fragrant rice as the main ingredient. An arrangement of festive dolls and figurines on step-like structures that narrates a religious story, known as “Golu” is the highlight of Navratri down south. People call guests to their house to visit their Golu and are offered this sweet prasadam along with sundal, and fruits. 

 

Kuttu ke atte ki Kachori 

In most northern states of India, people who fast during Navratri avoid the consumption of grains, pulses and cereals. Kuttu ka atta, made from buckwheat, is a special fasting ingredient widely used to prepare wholesome dishes for devotees who fast throughout these nine days. Kuttu is a non-cereal flour and is lighter than regular atta. The kachori is stuffed either with stuffing made of cottage cheese or potatoes cooked in mild spices, and later deep fried in oil. To enhance the taste, people add a sprinkle of black pepper or chillies to it and savour it with yogurt. 

Falahari Arbi 

Arbi, popularly known as ‘Taro Root’ in English, is one of the most popular vegetables that qualifies to be savoured during the scared days of Navratri. Arbi is cut into thin pieces, washed and par boiled.  It is then cooked in a paste made of tomato, green chillies and ginger, along with coriander seeds, cumin seeds, grated ginger, paprika, and seasoned well with rock salt. Light garnishing with herbs and served with kuttu ki roti or singhare ki roti makes for an amazing meal during Navratri. Adding other spices to enhance the taste makes it a healthy and lip-smacking option for devotees. 

Sundals 

Legumes tempered with grated coconut and mild spices are the highlight of Andhra Pradesh and Tamil Nadu during Navratri festivities. Varieties of sundal made of chickpeas, chana daal, moong daal, green gram, cow peas, filed beans, sweet corn, etc are prepared and given as prasadam during all the nine days of Navratri. The preparation is also fairly simple. The legumes are soaked overnight and cooked enough till they are soft, but not mushy. It is then tampered with mustard seeds, curry leaves, green or red chillies, chilli flakes, salt, and a dash of asafoetida.
